Sooji Halwa is a part of every Indian Household. This is one of the dishes which is prepared throughout the year, on any good occasion or even just a sunday. Since India is such a large country, the same dish is known and made as Rava Sheera in coastal western India and Rawa Kesri in South of India. The recipes are identical, only some minor ingredients are changed which rather add more flavor to the dish. However, Rawa or semolina is the base of every dish. Many times the water is replaced by milk and cardamom powder is added along with little saffron. This gives a unique saffron color to the dish. There it is known as Rawa Kesri (orange semolina).
