HAINANESE CHICKEN RICE

Hainese Chicken with Cucumbar Salad

On the occasion of forthcoming 50th Singapore National Day, We have brought you a very popular Singaporean dish recipe , often credited as the National Dish of Singapore .

Ingredients

Serves: 8

  • 1.5 kg whole chicken
  • 8 cloves garlic
  • 2.5 cm ginger, sliced
  • 1 onion, halved skin on
  • Salt and white pepper to taste
  • Water for boiling
  • Ice bath

For the rice

  • 3 cups long grain rice
  • 1.5 cm ginger, sliced
  • 5 cloves garlic, sliced
  • 5 pandan leaves, knotted
  • Chicken broth
  • Salt to taste
  • 2 teaspoons oil

For the dipping sauces

  • 3 fresh red chillies
  • Salt to taste
  • Juice of 1 lime
  • 4 cloves garlic
  • 1 slice ginger

Garnishing

  • 1 medium cucumber, peeled and sliced
  • 1 tomato, sliced
  • 1 tablespoon (15ml) light soya sauce
  • 1 teaspoon (5ml) sesame oil
  • Lettuce leaves
